Jagua Blue Becomes the First Acid-Stable Natural Blue Food Additive
From November 25 to 30, 2024, the Codex Alimentarius Commission (CAC) held its 47th meeting, where it unanimously approved an important resolution to formally include Jagua blue in the list of food additives and established specific regulations for the use of colorants and sweeteners across various food categories. Jagua blue, a natural blue edible colorant, is historically significant as it is the first recognized acid-stable natural blue colorant. This decision not only provides new choices for the food industry but also offers consumers more healthy and natural food options. Specifically, the approval of Jagua blue will enable its use in jams, jellies, and various other food categories, enriching the color and diversity of foods while meeting the growing market demand for natural food additives.
