What is acetic acid?
It is a carboxylic acid, a chemical compound that, in its liquid state is crystalline and with a degree of viscosity, and in its solid state it lacks color, and has a glassy appearance, it is widely used for the elaboration of vinegar, providing them with the smell, and the characteristic sour taste of these.
The most common form in which it is found is in aqueous solutions, dissolved in water up to 80%, this reason is fundamental for the uses of acetic acid in food industry, and characterize it, differentiating it from other acids, because it does not have the strength of most of them, such as nitric acid, or sulfuric acid.

Its undeveloped formula is CH3-COOH, where its more detailed composition is seen by a CH3 methyl radical consisting of one carbon atom, and three hydrogen atoms, and a carboxyl group -COOH consisting of one carbon atom, two oxygen atoms, one of them bonded to a hydrogen atom.
Uses of acetic acid in food industry
This acid is one of the main ingredients, and one of the most used by food technology, since its existence was known, it has had great prominence in food preservation.
One of the most common ways of obtaining acetic acid that has always been in use is through the fermentation of cereals and fruits, among which apples and grapes stand out, obtaining vinegar. With technological advances over the years, these processes have been modernized and modernized, becoming today methods of controlled fermentation and chemical synthesis processes.
Acetic acid is widely used in the food industry for its properties as a fermentation agent, and is used in combination with other compounds such as sodium bicarbonate for the manufacture of products that require baking.
Among other uses of acetic acid in food industry, it is combined with lactic acid for the manufacture of different types of fermented dough, giving them a characteristic sharp flavor, it is also used in the processing of wines, producing the volatile acidity, a fundamental characteristic in the tasting of these beverages.
The advantage of this acid is that it does not produce side effects or collateral effects because it is a natural substance that all the cells of the body possess, it can be harmful only for a very small and rare percentage of human beings, who suffer from vinegar intolerance.
The uses of acetic acid in food industry, include a myriad of other applications, among which we can mention an efficient preservative, as it prevents the formation and growth of bacteria and fungi, and helps in the inactivation of salmonella in foods such as mayonnaise, it is also used in salads, various types of sauces, meat products, as a tenderizer, as a preservative, dressings, acidity regulator, and as an egg coagulant.
