What Is an Aldehyde
The compound in which the carbonyl carbon is attached to hydrogen and a hydrocarbon group is called an aldehyde (RCHO), and the -CHO in the structure is called an aldehyde group. Inhibitors such as aldehydes reduce fermentation performance.
