UK maltster applies malt to plant-based meat products
As the plant-based industry continues to innovate and evolve, the plant-based meattrack is becoming increasingly recognized by consumers. In response to thismarket trend, UK malt and malt ingredient supplier Muntons has announced thatit is using malt extract ingredients to produce plant-based meat products suchas plant-based burgers, sausages and sliced deli beef.
According to thereport, malt undergoes a series of production processes such as soaking,germination, drying and processing, and the naturally occurring reducingsugars, enzymes and amino acids undergo a merad reaction that imparts nutritionand flavor to plant-based meat. At the same time, malt has a lowerenvironmental impact than other ingredients used to make vegetable protein,further satisfying market and consumer demand for cleaner labeling as well assustainability.
