Description

Glucan is a polysaccharide substance that exists in the mucus secreted by some microorganisms during their growth. It is divided into α-glucan and β-glucan. Later, Dr. Diluzio of Tulum University isolated this substance that can enhance immunity from baker's yeast and confirmed it as β-glucan. β-glucan is widely found in foods such as yeast, mushrooms, oats and barley. Among them, β-1,3/1,6 exists in yeast and mushroom glucan, while β-1,3/1,4 exists in oats and Chemicalbook barley glucan. β-glucan is different from common sugars (such as starch, glycogen, dextrin, etc.). The main difference lies in the different bond connection methods. The molecular structure of ordinary sugars is α-1,4-glycosidic bond, while β-glucan is mainly based on β-1,3-glycosidic bond and contains some β-1,6-glycosidic bond branches. β-glucan has a helical molecular structure due to its special bond connection mode and the existence of intramolecular hydrogen bonds. This unique configuration is easily accepted by the immune system.
