Sorbic acid, with the chemical name 2,4-hexadienoic acid, is a white crystalline powder of an unsaturated fatty acid. It is slightly soluble in water and readily soluble in organic solvents such as ethanol. As an efficient and low-toxicity preservative, its mechanism of action is to inhibit the dehydrogenase system within microbial cells, prevent carbohydrate metabolism, and thereby effectively inhibit the growth and reproduction of microorganisms such as bacteria, yeast, and molds.
