DSM launches new lactase for lactose-free/reduced sugar dairy products
DSM (DSM) announced the launch of its new Maxilact Super lactase, which is used to produce lactose-free, reduced-sugar dairy products to meet the growing consumer demand for lactose-free foods. The lactase can be used in milk, milk beverages, yogurt and various organic dairy products.
DSM claims that Maxilact Super can "break down lactose into a sweeter form", which can help products reduce sugar by up to 20%. At the same time, the enzyme can also reduce the hydrolysis time by 33%, helping to optimize production efficiency. Maxilact Super does not contain invertase and arylsulfatase. It has been reported that these two enzymes can produce off-flavors and reduce the stability of dairy products during the shelf life.
