Pink Albatross Puts Clean Label at the Heart of Plant-Based Ice Cream
Madrid-based plant-based ice cream brand, Pink Albatross, is making waves in Spain by emphasizing its clean label ingredient list, a strategy that has helped it surpass the likes of Ben & Jerry's in the local market. The brand, now found in 1,500 supermarkets in Spain, as well as Portugal and Germany, with plans to enter the French market through Carrefour, has a diverse range of eight flavors. These flavors include chocolate & coffee, hazelnut, passionfruit, mango, coconut, chocolate, straccia-coco, mint & chocolate, and pistachio, with new offerings like chocolate-covered ice cream lollies on the horizon.

The key to Pink Albatross's appeal is its clean label approach, focusing on using ingredients that are easily recognizable and understandable to consumers. The company believes in using ingredients that can be drawn, distinguishing itself from additives like methylcellulose or mono and di-glycerides of fatty acids commonly found in the ice cream industry. Pink Albatross is committed to ingredients obtained through mechanical force, heat, or fermentation, avoiding solvents or chemicals in its production.
To achieve a creamy texture without off flavors, Pink Albatross uses a combination of coconut and cashew nut paste along with sugar for sweetness, prioritizing the indulgent taste experience over strict nutritional optimization. This approach, according to the co-founder Luke Saldanha, delivers a more pleasurable product. The company's pistachio ice cream, for example, consists of water, coconut milk, cashew nut paste, sugar, pistachio paste, coconut oil, vegetable gums, and salt.
A unique feature of Pink Albatross is its low air content, which reduces the need for artificial emulsifiers or additives. The company's manufacturing process, ingredient selection, and facility usage play critical roles in achieving this. By using less air, Pink Albatross provides a more flavor-packed ice cream that lasts longer in one's mouth. While the average supermarket ice cream contains a significant amount of air, often making up half the weight of the product, Pink Albatross opts for a lower air content, ensuring a more fulfilling experience.
The selection of flavors also sets Pink Albatross apart, with inspiration drawn from ice cream parlors rather than conventional choices on supermarket shelves. For instance, their pistachio flavor is a top seller and a popular choice at ice cream parlors. Despite the premium quality of their product, Pink Albatross aims to maintain competitive pricing, positioning its offerings in line with well-known brands like Häagen-Dazs and Ben & Jerry's to encourage customer trials and benefit from high repurchase rates.
