IFF launches Nurica™ lactase in China, which can produce galactooligosaccharides
IFF announced the launch of Nurica™ lactase in China on March 31, 2021, providing a new way for dairy companies to create high-quality products, while improving profitability and meeting consumers' health needs. Nurica™ lactase is the latest innovation brought to China by IFF. Together with the Danisco® series of food ingredient solutions, it is currently part of the IFF product group.
More and more Chinese consumers are seeking healthier dairy products, including products with higher dietary fiber content, to meet the daily intake of dietary fiber and improve overall intestinal health and digestibility. Using Nurica™ lactase, dairy companies can adjust the sugar, dietary fiber and lactose content of their flavored milk, ice cream, fermented dairy products and other dairy products.
Nurica™ lactase is an innovative enzyme solution that can help meet a variety of nutritional challenges in dairy products, enabling dairy companies to use lactose in dairy products to naturally produce dietary fiber in the form of galactooligosaccharides. Galactooligosaccharides have also been proven to multiply the number of beneficial bacteria in the intestinal tract, so it has great potential for prebiotic innovation and improvement of intestinal health.
In the application test, Nurica™ lactase had no significant effect on the acidification process, taste or texture. Finally, delicious, stable and high-quality fermented dairy products that are innovatively customized for consumers' health trends can be obtained.
It is reported that Nurica™ lactase enables companies to obtain at least 1.6% of the in-situ generated galacto-oligosaccharide dietary fiber, creating an easy-to-digest lactose-free product, while reducing the sugar content in the final product. Unlike other lactases on the market, Nurica ™ Lactase can help dairy companies respond to a variety of market trends, from high-fiber content to low-sugar, low-lactose or lactose-free products, while maintaining quality and profitability.
