Canada Approves Chitosan Extracted from White Mushrooms as a Preservative in Various Foods

On May 30, 2024, Health Canada issued document M-FAA-24-05, proposing to revise the list of approved preservatives and authorize the use of chitosan extracted from white mushrooms in a variety of food products.

The approved uses and limits for chitosan are as follows:
