Is Sucralose the Same as Aspartame? What Are the Differences?
Sucralose and aspartame are common artificial sweeteners used in "low-sugar" or "no-sugar" beverages and foods, because they provide no nutrition and little calories. Understanding Sucralose
Sucralose is a halogenated sucrose derivative and the only functional sweetener developed from sucrose. Prof. Hough L. from England developed this potent sweetener in the 1970s. Its taste is pure, and it is extremely similar to sucralose in many aspects, such as the diffusing speed of sweetness, the duration of sweetness, and the aftertaste. Therefore, it is also known as "super sweet sucrose".

The chemical formula of sucralose is C12H19O8Cl3. Sucralose is odorless and hygroscopic. It is highly stable to temperature, very soluble in water, and may be dissolved in organic solvents such as ethanol and methanol. The solubility is 28.2g at normal temperature (28°C). Its stability is outstanding in light, heat, and pH value changes.

Sucralose is derived from harmless sucrose. It lightens sour and salty tastes, masks astringent, bitter, alcoholic, and other flavors, and enhances pungent and creamy flavors. It provides high sweetness, about 400 to 800 times sweeter than sucrose. It is safe and non-toxic, with no adverse effects on the human body, and has been certified by the US FDA. It is low in calories and can be used by persons who cannot ingest nutritive sweeteners, such as those who are obese or diabetic. At the same time, it will prevent dental cavities, which is beneficial to dental health.

Aspartame, also referred to as APM or Canderel, is a non-carbohydrate artificial sweetener. Aspartame was once widely utilized in pharmaceutical and food production. However, studies have shown that excessive aspartame use could bring adverse impacts on people's health.

Aspartame, with a full name as aspartyl phenylalanine methyl ester, has the chemical formula C14H18N2O5. It occurs as a white powder at room temperature. It is a natural functional oligosaccharide that is suitable for diabetics, not hygroscopic, and does not cause cavities.
2. Functions and drawbacks of aspartame
Aspartame is an effective sweetener in food and soft drinks, with a sweetness range of 180 to 220 times that of sucrose. Aspartame has a synergistic influence on several food and beverage flavors, especially sour fruit flavors. Aspartame can be utilized in synergistic combinations with strong sweeteners or carbohydrate-based sweeteners. This property further expands aspartame’s variety of applications.
Aspartame is stable in dry products such solid powdered beverages and various snacks. However, aspartame is subject to hydrolysis and cyclization at high temperatures, limiting its application in baked and fried meals that require high temperatures and lengthy processing times. Moisture, pH, and temperature can all contribute to the slow degradation of aspartame, resulting in the loss of sweetness.
Comparing Sucralose and Aspartame
Is sucralose the same as aspartame in sweetness and taste? Aspartame has a relatively low sweetness, around 200 times that of sucrose, but it has a similar sweetness and a high purity of sweetness, with no bitter aftertaste or metallic flavor. Sucralose is sweeter, reaching 600 times the sweetness of sucrose, yet its flavor is quite similar to sucrose and can leave a bitter aftertaste at high concentrations.
