Acesulfame is a food additive, chemically known as potassium acetyl sulfonate, also known as AK sugar, with the appearance of a white crystalline powder, it is an organic synthetic salt with a taste similar to that of sugar cane, easily soluble in water and slightly soluble in alcohol. Acesulfame is chemically stable, not easy to decompose and fail; it does not participate in the body's metabolism and does not provide energy; it is sweet and cheap; it is not cariogenic; it is stable to heat and acid and is currently the fourth generation of synthetic sweeteners in the world. It can produce a strong synergistic effect when mixed with other sweeteners and can increase the sweetness by 20%~40% in general concentration.

As a non-nutritive sweetener, acesulfame is used in food and beverages in a general pH range with essentially no change in concentration. It can be mixed with other sweeteners and is particularly effective when combined with aspartame and cyclohexylaminosulfonates. It can be widely used in solid drinks, sauces, preserves, gummies, table sweeteners and various food products. It has a strong sweet taste, about 200 times sweeter than sucrose, and has similar taste properties to saccharin, with a bitter taste at high concentrations. It can be used as a sweetener in food and medicine.
The regulations and standards of international organisations, countries and regions such as the Codex Alimentarius Commission (CAC), the European Union, the USA, Japan, Australia, New Zealand and Canada allow acesulfame to be used as a sweetener in the corresponding food products. For example, in some European and American countries, acesulfame can be used in sweetened products. China's National Food Safety Standard for the Use of Food Additives (GB 2760-2014) also stipulates that acesulfame can be used in ready-to-eat flavoured foods with milk as the main ingredient or in their prepared products (excluding ice cream and flavoured fermented milk) (only in canned dairy-based desserts), frozen beverages (except edible ice), canned fruit, jams, preserves, pickled vegetables, processed edible mushrooms and algae, canned mixed cereals, black sesame paste, and canned food. canned mixed grains, black sesame paste, canned cereal desserts, baked goods, beverages (except packaged drinking water), jellies, table sweeteners, condiments, sauces, confectionery, gum-based confectionery, etc., but not in cold fruit products. China also has a corresponding quality specification for acesulfame "National Standard for Food Safety Food Additive Potassium Acesulfamate" (GB 25540-2010). In addition, according to the National Standard for Food Safety Guidelines for the Labelling of Prepackaged Foods (GB 7718), the use of acesulfame in food (including the use of acesulfame-containing compound sweeteners) must be labelled on the food label.
