Gellan gum is also known as Keke gum and gellan gum. The main components are glucose, glucuronic acid and rhamnose in a ratio of 2:1:1, and four monosaccharides are linear polysaccharides composed of repeating structural units. In the natural high acetyl structure, there are acetyl group and glyceric acid group, they are all located on the same glucose group, and there is one glyceric acid group in each repeating structure, and one acetyl group in every two repeating structures. After saponification with KOH, it is transformed into low-acetyl gellan gum. The glucuronic acid group can be neutralized by potassium, sodium, calcium and magnesium salts. It also contains a small amount of nitrogen produced during fermentation production
