Taurine, also known as β -taurine, Cholic acid, taurocholine, was extracted from bezoar in the beginning. Taurine is a sulfur-containing non-protein amino acid, which is closely related to the metabolism of cystine and cysteine, and has the functions of enhancing immunity, protecting retina ,myocardium, anti-oxidation and so on. Taurine is also one of the most abundant free amino acids in mammalian tissues and has been widely concerned and applied to the food and beverage industry.
