  As a food additive, the functional properties of CMC depend on the degree of substitution of the cellulose structure, as well as the chain length of the cellulose backbone structure and the degree of clustering of the carboxymethyl substituents. The addition of CMC can help to make the food retaining a strong cohesiveness, pulling, bending and reduces breaking, and can keep products away from air and keep it stored longer.
  
  CMC is used as a thickener, stabilizer, and emulsifier. It is commonly added to ice cream, yogurt, and other dairy products to improve texture and prevent separation. It is also used in baked goods, sauces, and dressings, among other food products.
  
  CMC is also used in the pharmaceutical industry, where it is used as a binder, disintegrant, and suspending agent in tablets, capsules, and other medications. It is also used as a viscosity enhancer in eye drops and nasal sprays
