Australia and New Zealand Greenlight Enzymatic Steviol Glycosides Production
On November 3, 2023, the Food Standards Australia and New Zealand (FSANZ) introduced Notice No. 268-23, authorizing Application No. A1268. This groundbreaking development gives the green light to employing a set of genetically modified E. coli-derived enzymes as processing aids for the production of the high-potency sweetener, Steviol glycosides, through biotransformation.
According to the notification, one of the enzymes, fructanase, plays a pivotal role in the production process, particularly in the preparation of bakery items.
