According to the evaluation, the food enzyme pectin esterase, produced by AB Enzymes GmbH using the genetically modified rice miso mold strain AR-962, was found to be safe for use in the specified food manufacturing processes. In three of these processes, the food enzyme–total organic solids (TOS) is removed from the final products. Therefore, the dietary exposure to the food enzyme–TOS was estimated for the remaining four processes.
The assessment revealed that the dietary exposure to the food enzyme–TOS was up to 0.575 mg TOS/kg body weight (bw) per day among European populations. The panel derived a margin of exposure of at least 1739, considering the highest tested dose (1000 mg TOS/kg bw per day) and the NOAEL (no observed adverse effect level) reported in the previous evaluation. Based on the available data and the revised margin of exposure, the panel concluded that this food enzyme does not raise any safety concerns under the revised intended conditions of use.
