    The commonly referred to chitin mainly refers to chitosan, which is also known as chitosan, deacetylated chitin, deacetylated chitosan, soluble chitin, and soluble chitosan. It is an amorphous solid with a specific rotation [α]D11 ranging from -3° to +10°. It is almost insoluble in water, but soluble in organic acids such as formic acid, acetic acid, benzoic acid, and cyclohexanecarboxylic acid, as well as in dilute inorganic acids. The industrial product is a white or grayish-white semi-transparent sheet-like solid, with a slight pearl-like luster. It has no odor, is non-toxic, and is biodegradable. It is one of the rare natural cationic polyelectrolytes. It is obtained by hydrolyzing chitin with strong alkali or removing the acetyl groups on the chitosan sugar chain with enzymes. The resulting polysaccharide can dissolve in low-acidity aqueous solutions and has good biocompatibility, no antigenicity, and is insoluble in human body fluids. It is widely present in nature in the shells of low-grade animals such as crustaceans (shrimp, crabs) and insects, as well as in the cell walls of low-grade plants such as fungi and bacteria. Chitosan can be produced by removing the acetyl groups from chitin. Under the conditions of 100°C and 40% NaOH, chitin is acted upon to produce the deacetylation reaction, thereby obtaining chitosan. This is a white or grayish-white semi-transparent sheet-like solid that is insoluble in water and alkali but soluble in most dilute acids, including formic acid, acetic acid, and hydrochloric acid. The molecular structure of chitosan is similar to that of cellulose, except that at the C2 position, an amino group (—NH2) is connected. Therefore, it has affinity for the fibers in paper, forming ionic bonds and strong hydrogen bonds. Moreover, chitosan has good film-forming properties, which are conducive to improving the surface strength of paper. Thus, it becomes one of the reinforcing agents for special paper. Chitosan is in powder form, odorless and tasteless, and the aqueous solution has a slightly pungent sensation. When added to food and subjected to heating treatments such as boiling and certain degrees of frying, baking, etc., the structure does not change. Under nitrogen protection, heating to 250°C does not cause decomposition. At room temperature, when the chitosan powder is placed in a natural environment protected from sunlight for 181 days, no significant changes occur in appearance, solubility, or deacetylation degree. When added to cookies and placed in an environment at 40°C with 75% relative humidity for 80 days, the dietary fiber and chitosan content in the samples do not change.

    Fight against Tropical & Subtropical Diseases
    Crop Science supports public health and adherence to hygiene standards through its modern range of pest control products. One focus here is on the control of insects that transmit tropical or subtropical diseases such as malaria, dengue fever and Chagas disease.
