Uses: It can inhibit the activities of the respiratory enzyme system and electron transport enzyme system of microbial cells, and destroy the cell membrane structure of microorganisms, thereby having a wide range of antibacterial effects on molds, yeasts and bacteria. Its antibacterial effect is stronger than benzoic acid and sorbic acid. Used as a food preservative, used in the production of soy sauce and pickles. Preparation or source: p-hydroxybenzoic acid is prepared by reacting potassium phenol with carbon dioxide under pressure, and is esterified with ethanol in the presence of sulfuric acid.
