    Description

Agar or agar-agar, is a jelly-like substance consisting of polysaccharides obtained from the cell walls of some species of red algae, primarily from "ogonori" and "tengusa". As found in nature, agar is a mixture of two components, the linear polysaccharide agarose and a heterogeneous mixture of smaller molecules called agaropectin. It forms the supporting structure in the cell walls of certain species of algae and is released on boiling. These algae are known as agarophytes, belonging to the Rhodophyta phylum. The processing of food-grade agar removes the agaropectin, and the commercial product is essentially pure agarose.

Agar has been used as an ingredient in desserts throughout Asia and also as a solid substrate to contain culture media for microbiological work. Agar can be used as a laxative; an appetite suppressant; a vegan substitute for gelatin; a thickener for soups; in fruit preserves, ice cream, and other desserts; as a clarifying agent in brewing; and for sizing paper and fabrics.

    Agar More Info

Agar, also known as agar - agar, is a gelatinous substance derived from red algae, primarily from species of Gelidium and Gracilaria. It has a long history of use and is widely employed in various fields due to its unique properties. The following is a detailed introduction:

    Basic Information

Composition: Chemically, agar is a complex polysaccharide composed of two main components, agarose and agaropectin. Agarose is responsible for the gel - forming properties of agar, while agaropectin contains various side - chain sugars and sulfate groups, which affect the solubility and other characteristics of agar.

Appearance: It usually appears as a white or light - yellow powder, granular or fibrous substance. In its pure form, agar has no distinct odor or taste.

    Properties

Gel - forming ability: One of the most remarkable properties of agar is its ability to form a firm gel when dissolved in water and cooled. Even at low concentrations (usually 0.5% - 2.0%), agar can form a stable gel structure. The gel - forming process is reversible, meaning that the gel can be melted by heating and reformed by cooling.

High melting and gelling points: Agar has a relatively high melting point, typically around 85°C, and a gelling point between 32°C and 40°C. This wide temperature hysteresis between melting and gelling makes agar very useful in many applications, as it can remain in a gel state at room temperature or body temperature, providing a stable matrix.

Solubility: Agar is insoluble in cold water but dissolves readily in hot water. The solubility of agar in water is pH - dependent, and it shows better solubility in slightly alkaline solutions.

Chemical stability: Agar is relatively stable under a wide range of chemical conditions. It is resistant to hydrolysis by most enzymes and is not easily decomposed by common chemical reagents, except strong acids and alkalis.

    Applications

Food industry: It is widely used as a gelling agent, thickener, and stabilizer in the food industry. It is used to make jellies, puddings, custards, and other desserts, giving them a firm and smooth texture. In bakery products, agar can help retain moisture and extend the shelf life. It is also used in the production of low - fat and low - calorie foods as a substitute for fats and gelatin.

Biological and medical fields: Agar is an essential component in microbiology for preparing culture media. It provides a solid support for the growth of bacteria, fungi, and other microorganisms. In addition, agarose, a purified form of agar, is widely used in gel electrophoresis to separate and analyze DNA, RNA, and proteins based on their size and charge. In the medical field, agar - based hydrogels are being studied for potential applications in tissue engineering and drug delivery systems.

Cosmetics and personal care products: Agar is used in some cosmetics and personal care products, such as creams, lotions, and shampoos, as a thickener and stabilizer. It helps to improve the texture and viscosity of these products, making them easier to apply and more stable during storage.

Other applications: In the paper industry, agar is used as a sizing agent to improve the surface properties of paper. It is also used in the textile industry for fabric finishing and in the pharmaceutical industry for coating tablets and capsules.
